Piri-Piri Cod Parcels

I’ve eaten enough calories this Sunday to warrant reigning it all the way back the whole week long. Hence fish parcels. These are great ways to cook an entire nutritious dinner in one little shiny silver packet. Or, baking paper if you’re more organised than my scatter-brained self. At a total price of approximately €2 per portion, this is a cheap and easy way to be healthy.

Anyway, this one came about because I had cod, potatoes, lemons and seasoning. And it’s nyummy, low-calorie and has a delicious purity of flavour I normally cook right out of my meals.  This serves four, or, in our house, four suppers for the cod-loving OH.

  • 1 whole lemon, quartered + 1 head broccoli, floreted + 12 baby potatoes, halved
  • 1 box frozen cod tenderloins (or 4 fresh cod pieces, whichever the budget allows)
  • ½ cup white wine
  • 1 tsp piri-piri spice mix

1. Spread large piece tinfoil / baking paper out on table.  Arrange broccoli florets and baby potato halves, placing four cod fillets on top, with quarter of lemon in between. Sprinkle with piri-piri and drizzle in white wine.

2. Bind up parcel tightly and cook for twenty minutes. Remove and allow to rest, sealed, for further ten minutes. Serve with side salad if you can be bothered.

Cheats:

There aren’t any, this recipe couldn’t possibly be simpler. Feel free to randomly add different spices / herbs as necessary or substitute a cheaper fish, makes no difference as long as it’s tasty.

Oh, ps, I used the frozen ‘roasties’ here as I didn’t have any baby potatoes, but not sure as to the calories content, I’m suspicious because they taste so good….
